VITAL ROOT in DENVER, CO

If you’re ever in the Denver area, you may consider stopping by Vital Root. It is a vegan friendly restaurant on the westside of Denver in an area where there is a plethora of food options for dinning. All the restaurants are on a strip off of Tennyson Street, so if you are with friends who are not vegan, they can find something on the strip. You can order to go, or they can bring their food over and sit in at Vital Root with you.

Vital Root has an open dining area where you can enjoy your meal, or you can choose to sit in the partially enclose balcony area where the view is directly facing the strip. A third option is to sit on the outside patio.

LET‘S TALK ABOUT THE MENU

I really love bringing the family here when I’m in town. There is something for everyone to enjoy on the menu. One of my children has a lot of different food allergies and Vital Root can make accommodations for them all. I really like the fact that I do not have to be worried about cross contamination here because they are very well equipped in their preparation process. With every meal you can advise what you want to omit, and you can even make additions.

My favorite thing on the menu is the Gluten-Free Falafel Wrap. The flavor of the fava bean, cucumber, tomato and tzatziki tehina are an amazing combination that I very much enjoyed. It also comes with a naan wrap if you do not mind the gluten.

Another delicious choice (and also very unique) is the Hummus & Fried Artichokes. It’s fried artichoke with a side of hummus, carrots, harissa chickpeas, and olives. It is absolutely wonderful to the taste and truly one of a kind. Nothing that I have ever come across at any other restaurant.

On a side note, if you like a little spice, order a side of the House Made Kimchi. It’s just the kick you need to boost your vitals.
